Making the Pizza Dough:
1/ Place the flour and dry yeast in a bowl, add half of the water (about 80ml), and mix with a spoon (a silicone or wooden spoon is recommended for easier handling). Once the water is absorbed, gradually add the remaining water along with the salt and olive oil. Knead the dough until it comes together.
2/ Transfer the dough to a work surface and knead it until the surface becomes smooth (about 10 minutes). Shape the dough into a ball, cover it with a bowl, and let it rest for 10 minutes.
Folding the Dough:
3/ Lightly dust the work surface with flour and shape the dough into a rectangle. Fold one side toward the center, followed by the other side. Then, fold the top edge down toward the bottom edge and gently round the dough. Repeat this process one more time, shaping the dough into a smooth, round form.
4/ Coat a clean bowl with olive oil, place the dough inside, and cover with a kitchen towel or plastic wrap. Let it rise for 2–3 hours, or until the dough has tripled in size.
Preparing the Cheese:
5/ While the dough is rising, place the mozzarella cheese in a colander lined with kitchen paper to remove excess moisture. Once the moisture is removed, cut the mozzarella and Gorgonzola cheese into bite-sized pieces.
Shaping the Pizza:
6/ Line a baking sheet with parchment paper and lightly coat it with olive oil. Transfer the risen dough to the work surface, then press it into a circular shape with your fingers. If the dough shrinks back, cover it with a kitchen towel and let it rest for 10 minutes before stretching it again.
Adding the Cheese and Baking:
7/ Evenly distribute the Emmental, mozzarella, Gorgonzola, and Parmesan cheeses over the dough.
8/ Preheat the oven to 200°C and bake the pizza for about 25 minutes. It’s ready when the edges are golden brown, and the cheese begins to bubble.
