For 4 people
1/ Wash the spinach, drain the water, and cut it into small pieces. (Omitted if using frozen spinach)
2/ Heat olive oil (not listed) in a frying pan, stir-fry the spinach, and season lightly with salt and pepper.
3/ Cut the bread into cubes.
4/ In a bowl, mix spinach, ricotta cheese, bread, shredded cheese, eggs, flour, nutmeg, salt, and pepper.
5/ Season with nutmeg, salt, and pepper.
6/ Put plenty of water and 1 teaspoon of salt in a large pot and bring to a boil.
7/ During this time, make the dumplings.
8/ When the water in the pot boils, add the dango, turn the heat to medium, and simmer for 10 to 15 minutes.
9/ When the buns start to float, take them out.
10/ Make butter sauce. Heat the butter in a frying pan, and when it melts, add the minced garlic and 2 tablespoons of lemon juice and mix.
11/ Arrange the dumplings on a plate and cover with sauce and shredded cheese.
★Ricotta cheese is a mild cheese, so it has a light taste. I think you could use cottage cheese as a substitute.
★You can customize the sauce to your liking, such as tomato sauce or cream sauce.
★Dumplings alone are filling, so try them with a salad or something!
