/ Optional Pre-Soaking for Tenderness: If you have time, place the pork in a container or a plastic bag with 1 teaspoon each of salt and sugar, and 4 tablespoons of water. Let it soak for at least 2 hours. This step helps tenderize the meat. For best results, you can do this the day before and refrigerate overnight.
/ Pat Dry and Lightly Season: Remove the pork and pat it dry with kitchen paper or a clean towel. Season lightly with salt and pepper.
/ Coat with Flour: Lightly coat both sides of the pork with flour. Shake off any excess.
/ Pan-Fry and Deglaze: Heat butter or olive oil in a frying pan over medium heat. Add the pork slices and fry on both sides until golden. Pour in the white wine to deglaze the pan.
/ Melt the Gorgonzola: Place slices of Gorgonzola cheese on top of the pork. Cover the pan and cook over low heat for about 3 minutes, until the cheese is melted and creamy.
