  • 600g of potato
  • 1 tablespoon of butter
  • 2 of egg yolks
  • 50g of potato starch
  • 1 teaspoon of salt
  • A little nutmeg
How to make it:

1/ Prepare the Potatoes: Wash and peel the potatoes, then cut them into small pieces. Place them in a pot.

2/ Boil the Potatoes: Add enough water to the pot to submerge the potatoes completely. Stir in 1 teaspoon of salt (additional, not from the listed ingredients) and bring to a boil. Cook until the potatoes are soft.

3/ Melt the Butter: While the potatoes are boiling, melt the butter in the microwave.

4/ Drain and Dry the Potatoes: Once the potatoes are soft, drain the water completely. Return the pot to the stove over low heat and stir the potatoes with a wooden spoon to evaporate any remaining moisture.
