Ingredients

Cooking time: 50 minutes
Ingredients:

For 4 people:

  • 1 of Pumpkin (approx. 600 g)
  • 120 g of Onion (1โ€“2 pieces)
  • 1 of Apple
  • 2 tablespoons of Butter or Coconut Oil (adjust to taste)
  • 1 tablespoon of Sugar
  • An appropriate amount of Salt
  • An appropriate amount of Pepper
  • 3 tablespoons of Apple Cider Vinegar or White Wine Vinegar (add to your preference)
  • 2 to 3 teaspoons of Bouillon (according to the amount of water)
  • 600โ€“800 ml of Water
How to make it:

1/Prepare the Pumpkin: Peel the skin, remove the seeds, and cut the pumpkin into small pieces.

2/ Chop the Onion: Finely chop the onions.

3/ Prepare the Apple: Cut the apple into small pieces (you can leave the skin on or remove it, depending on your preference).

4/ Sautรฉ the Onion: Put butter in a pot and fry the onions until fragrant.
5/ Add Pumpkin and Apple: Add the pumpkin, apple, and sugar, then continue to fry for another 5 minutes.

6/ Simmer the Soup: Add apple cider vinegar, water, and bouillon. Cover and simmer over medium heat for about 20 minutes, until the ingredients are soft.

7/ Blend Until Smooth: Turn off the heat, remove the pot from the stove, and use a hand blender to puree the ingredients until smooth.
8/ Finish and Season: Return the pot to the heat, season with salt and pepper, and itโ€™s ready to serve!
