Clafoutis is a fluffy, pudding-like cake made with milk, eggs, and fruit. You can enjoy a variety of fruit fillings, including cherries, berries, apples, and small sweet plums called Reine-Claude, which are harvested in France in the summer. I made this recipe using rhubarb, which is delicious in spring. Rhubarb is a red vegetable that looks like celery and is often used in sweets.

  • 500 g
    Rhubarb
  • 4
    Eggs
  • 70 g
    Flour
  • 150 g
    Sugar
  • 200 ml
    Milk
  • 200 ml
    Fresh cream *You can also use milk.
  • 8 g
    Vanilla essence or vanilla sugar
  • 0.5
    teaspoon cinnamon powder (if available)
  • 1
    Appropriate amount of butter
  • 1
    Appropriate amount of powdered sugar
Cooking time: 60 minutes
Ingredients:

For 4-8 people

  • Rhubarb 500g
  • 4 eggs
  • Flour 70g
  • Sugar 150g
  • Milk 200ml
  • Fresh cream 200ml *You can also use 200ml milk.
  • Vanilla essence or vanilla sugar 8g
  • ½ teaspoon cinnamon powder (if available)
  • Appropriate amount of butter
  • Appropriate amount of powdered sugar

 

How to make it:

1/ Pour water into a pot and bring it to a boil.
2/ Turn the rhubarb skin side up and cut it into 2cm long pieces. Place them in boiling water for about 2 minutes, then put them in a colander to remove the moisture.


3/ In a large bowl, combine eggs, sugar, flour, vanilla extract, and cinnamon powder and mix well with a whisk.

4/ Add milk and fresh cream and mix again.

5/ Spread butter on a heat-resistant plate (26 cm in diameter) and sprinkle with powdered sugar.

6/ Pour the batter into a heatproof dish and add the rhubarb.

7/ Bake in the oven at 200℃ for about 40 minutes. ​​

★After baking, leave it for a few hours or a day to reduce the sourness of the rhubarb and give it just the right amount of sweetness.
★Rhubarb is sold in large quantities at marches and supermarkets in Germany and France in spring. You may not see it very often in Japan, but if you do, please give it a try. Also, feel free to experiment with your favorite fruits.
★You can also sprinkle powdered sugar on top if you like.
★On a side note…I learned about clafoutis when my father-in-law made it with his children using fruits he had picked in the forest when we went to France during summer vacation. It’s like a taste reminiscent of summer vacation memories.
