Speaking of quiche, it is Quiche Lorraine, which is famous in the Lorraine region of France. Add spinach to the basic bacon and cheese ingredients to increase the volume. Add crème fraîche, sour cream, ricotta cheese, etc. to your preference for a deep flavor!

  • Puff pastry sheet 280g (32cm in diameter)
  • Frozen spinach 450g
  • 4 eggs
  • Crème fraîche 200g or fresh cream, sour cream, ricotta cheese, etc.
  • 100g of your favorite shredded cheese
  • Bacon (Lardon) 250g
  • Butter Appropriate amount
  • Olive oil Appropriate amount
  • Salt Appropriate amount
  • Pepper Appropriate amount

 

How to make it:

1/ Grease a pie plate (26cm in diameter) with butter.

2/ Place the pie dough sheet on a pie plate and poke holes in several places with a fork.

3/ Put bacon in a frying pan and fry. No special oil required. Once cooked, remove it to a plate.

4/ Add olive oil to the same frying pan and fry the spinach.

5/ Stir the eggs in a bowl, then add the crème fraiche and mix.

6/ Add bacon, spinach, cheese, and pepper and mix. (Bacon has a salty taste, so there is no need to add any salt, but please adjust according to your preference.)

7/ Bake in an oven preheated to 180℃ for 30 to 40 minutes and it’s done.

★For the pie dough, I use refrigerated puff pastry sheets purchased at a supermarket in Germany, but I think frozen puff pastry sheets are easier to obtain in Japan, so you can cut them and use them. I think it’s good.
★This recipe uses Emmental cheese, but feel free to use your favorite cheese such as Gruyère or pizza cheese.
★If you don’t have crème fraîche, substitute sour cream or fresh cream, or if you prefer a lighter taste, try using ricotta cheese.
★Lardon is a French version of bacon that is shaped like a French clapboard and is quite salty. This recipe uses German bacon (because it’s made in Germany). The shape and taste are also similar to lardon. This bacon is also salty like French lardon.
★Frozen spinach is convenient when you want to save time.
★The baking time may vary
