1/Prepare the Zucchini: Wash the zucchini and cut off the stems. Slice them finely using a slicer (or chop finely with a knife). Add salt, mix well, and let sit for about 10 minutes. Then squeeze out as much moisture as possible.
2/ Chop the Herbs: Finely chop the green onion and parsley.
3/ Mix the Vegetables and Spices: Add the chopped green onion and parsley to the zucchini. Then add pepper, paprika powder, and the egg. Mix everything thoroughly.
4/ Add the Flour: Sprinkle in the flour and stir well until evenly combined.
5/ Fry the Fritters: Heat a generous amount of oil in a frying pan. Scoop spoonfuls of the mixture (about the size of a small pancake) and drop them into the pan. Fry until golden brown on both sides.
6/ Drain the Oil: Remove the fritters from the pan and place them on kitchen paper to drain any excess oil.
7/ Make the Yogurt Sauce: For Sauce 1, finely slice or chop the cucumber and mix it with the remaining ingredients.
For Sauce 2, simply place all ingredients in a separate bowl and stir to combine.
