European sweet potatoes look similar to Japanese sweet potatoes on the outside, but the inside is orange and seems to have more water than Japanese sweet potatoes. Baking it in the oven brings out the sweetness and makes it delicious, so I tried making it like a roasted sweet potato. Also, you can make other side dishes while baking, making it an easy and convenient menu.

    Tablespoons lemon juice
  • 2
    Tablespoons olive oil
  • 2
    Teaspoons of your favorite dried herbs (basil, rosemary, thyme, etc.)

    Pinches of salt

    Pinches of pepper
  • Yogurt sauce
  • 150 g
    Plain yogurt *Greek yogurt is best
  • 2
    Teaspoons olive oil
  • 1
    Teaspoon lemon juice
  • 1
    Tablespoon parsley
  • Salt and pepper as needed

Ingredients:

For 4 people

  • 2-4 sweet potatoes
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 2 teaspoons of your favorite dried herbs (basil, rosemary, thyme, etc.)
  • 2-3 pinches of salt
  • 2-3 pinches of pepper
  • Yogurt sauce
  • Plain yogurt 150g *Greek yogurt is best
  • 2 teaspoons olive oil
  • 1 teaspoon lemon juice
  • About 1 tablespoon parsley
  • Salt and pepper as needed
How to make it:

1/ Wash the sweet potatoes well and cut them in half.
2/ Make a square cut on the surface of the sweet potato with a knife and sprinkle lemon juice on the sweet potato (to prevent oxidation)
3/ Spread cooking paper on a baking sheet or prepare a heat-resistant plate and place the sweet potatoes on it.

4/ Add olive oil, herbs, and salt to a bowl and mix well.

5/ Use a brush to coat the sweet potatoes with the herbal olive oil you made in step 4.

6/ Bake in an oven preheated to 180℃ for 40 to 50 minutes.

7/ While baking, make yogurt sauce. Mix yogurt, olive oil, lemon juice, parsley, salt, and pepper.

★Pair it with a salad as shown in the photo to create a healthy vegetable-only menu.
★It’s great for lunch or a light dinner.
★The sweetness of sweet potatoes and the refreshing yogurt sauce go very well together. Of course, you can also enjoy just the sweetness of the sweet potato without the sauce.
