Serves 4-8
1/ Crush the chocolate and put it in a bowl and melt it in a double boiler.
2/ Divide the egg whites and egg yolks into two bowls.
3/ Add a pinch of salt to the bowl containing the egg whites and mix with a whisk until stiff.
4/ Add vanilla sugar (optional) to the bowl containing the egg yolks and mix until it becomes whitish, then add the chocolate melted in a double boiler and mix again.
5/ Add the egg whites in several portions and mix gently.
6/ Add crรจme fraiche and mix.
7/ Pour the contents into a container (you can also divide the contents into smaller containers). Let it sit in the refrigerator for about 3 hours and it’s done.

It’s delicious enough with just chocolate and eggs, but we recommend adding crรจme fraรฎche as it makes it even creamier and has a softer texture. You can also use fresh cream, which is easy to obtain, but the taste will be softer than crรจme fraรฎche, so we recommend using less than crรจme fraรฎche. Also, be aware that it will take a long time for it to harden.

If you are just making a small amount (for 4 people), we recommend using half the amount listed in the recipe. Many French people love chocolate, and it runs out quickly, so if you want to eat a lot, try using the amount in this recipe. As a side note, at my child’s school, it seems that everyone brings their own snacks to eat during the last class at the end of the term, and I heard that a friend of mine made mousse au chocolat in a large bucket-like container. And, of course, it disappeared in no time. That’s why it’s a dessert that is loved by French people.
