1/ Put couscous in a bowl. Boil water, add to the bowl with couscous, cover and let stand for 5-10 minutes. (Please refer to the instructions on the package of couscous you use.
2/ Remove the lid from the couscous, mix and let cool.
3/ Wash the beans in a colander and drain.
4/ Cut the pomegranate in half and remove the fruit in a bowl of water, then put it in a colander to remove the moisture.
5/ Chop the parsley.
6/ Mix lemon juice, olive oil, honey, mustard, salt, and pepper in a bowl.
7/ Add couscous, beans, pomegranate, and parsley to a bowl and mix well.
8/ Place the salad on a plate, cut or crush the feta cheese into small pieces and place on the salad.

Try using your favorite beans, such as mixed beans or white kidney beans.

You may not see many pomegranates in supermarkets, but you can try other fruits such as tomatoes, blueberries, grapes, and figs.

Feta cheese is a fresh cheese made from Greek sheep’s milk. You can also enjoy it with French chevre cheese or cottage cheese.
