When we think of pomegranate, we think of pomegranate juice, but the just right amount of sourness and sweetness of pomegranate fruit brings out the flavor of salads. A refreshing salad with the perfect combination of beans and pomegranate couscous. Add some salty feta cheese for an extra kick of flavor.

  • 400 g
    Canned boiled beans (chickpeas, kidney beans, etc.)
  • 1
    Piece Pomegranate
  • 50 g
    Couscous
  • 50 ml
    Water Approx.
  • Parsley Appropriate amount
  • 2
    Tablespoons Lemon juice
  • 1
    Tablespoon of honey
  • 2
    Tablespoons olive oil
  • 1
    Teaspoon mustard
  • 1
    Salt Appropriate amount
  • 1
    Pepper Appropriate amount
  • 70 g
    Feta cheese, approx. or chevre, cottage cheese, etc.
Cooking time: 15 minutes
Ingredients:

For 4 people

  • Canned boiled beans (chickpeas, kidney beans, etc.) 400g
  • Pomegranate 1/2 to 1 piece
  • Couscous 50g
  • Water Approx. 50cc
  • Parsley Appropriate amount
  • Lemon juice 2 tablespoons
  • 1 tablespoon of honey
  • 2 tablespoons olive oil
  • 1 teaspoon mustard
  • Salt Appropriate amount
  • Pepper Appropriate amount
  • Feta cheese, approx. 70g, or chevre, cottage cheese, etc.
How to make it:

1/ Put couscous in a bowl. Boil water, add to the bowl with couscous, cover and let stand for 5-10 minutes. (Please refer to the instructions on the package of couscous you use.

2/ Remove the lid from the couscous, mix and let cool.

3/ Wash the beans in a colander and drain.

4/ Cut the pomegranate in half and remove the fruit in a bowl of water, then put it in a colander to remove the moisture.

5/ Chop the parsley.
6/ Mix lemon juice, olive oil, honey, mustard, salt, and pepper in a bowl.

7/ Add couscous, beans, pomegranate, and parsley to a bowl and mix well.

8/ Place the salad on a plate, cut or crush the feta cheese into small pieces and place on the salad.

โ˜…Try using your favorite beans, such as mixed beans or white kidney beans.
โ˜…You may not see many pomegranates in supermarkets, but you can try other fruits such as tomatoes, blueberries, grapes, and figs.
โ˜…Feta cheese is a fresh cheese made from Greek sheep’s milk. You can also enjoy it with French chevre cheese or cottage cheese.
โ˜…Use with bread or as a side dish for meat dishes.
