For 4 people
1/ Finely chop the green onions, onions, and potatoes.
2/ Heat the butter in a pot, then add the onions and green onions and fry for about 5 minutes until translucent.
3/ Add potatoes and stir fry a little while stirring.
4/ Add water and bouillon, reduce heat to medium-low and simmer for about 30 minutes.
5/ Once the potatoes are soft, remove from the heat and blend with a hand mixer until smooth.
6/ Add milk, crรจme fraรฎche, and nutmeg and mix.
7/ Return to the heat and simmer on low heat for about 5 minutes, then adjust the taste with salt and pepper, remove from the heat and let cool.
8/ Place the pot in the refrigerator to cool for a few hours.
9/ Pour the soup into a bowl, chop some parsley or chivettes, put it on top of the soup, and enjoy.

If you use crรจme fraรฎche, you can enjoy a relaxing texture. If you prefer a smoother texture, you can use fresh cream or milk.

If you make it the day before and store it in the refrigerator, the flavors will soak in and it will be even more delicious. Perfect for summer menus.
