1/ Wash the sun-dried tomatoes.
2/ Pour water into a pot, bring to a boil, add vinegar, add sun-dried tomatoes and boil for about 5 minutes, then drain in a colander. Once it has cooled down a little, remove the moisture with kitchen paper.
3/ Wash the basil leaves and drain them with kitchen paper or a dish towel.
4/ Grate the Parmesan cheese. (Omitted if using grated cheese)
5/ Lightly toast the pine nuts in a frying pan.
6/ Put the sun-dried tomatoes, basil leaves, pine nuts, and olive oil in a bowl and blend until smooth with a hand blender.
7/ Add Parmesan cheese and make it even smoother. Taste and add salt and pepper if necessary. If you want it to be smoother, add olive oil to make a paste of your choice.

The finished amount is approximately 450g.

If you do not use it immediately, please store it in a bottle that has been sterilized with boiling water.

When using it for pasta, try spreading the paste with olive oil, or adding a little pasta boiling water, or arrange it in your own way.
