When I bought sun-dried tomatoes in Florence, I tried making tomato paste based on the method I learned from the store staff about how to use sun-dried tomatoes. It’s delicious in pasta sauce or on bread. This paste is packed with the umami flavor of tomatoes.

  • 160 g
    Dried tomatoes
  • 2
    Teaspoons White wine vinegar, vinegar
  • 30 g
    Basil leaves
  • 2
    Cloves of garlic
  • 100 ml
    Olive oil
  • 50 g
    Parmesan cheese
  • 30 g
    Pine nuts, walnuts, almonds, etc.
  • Salt Adequate amount
  • Pepper Appropriate amount
Cooking time: Approximately 20 minutes
Ingredients:
  • Dried tomatoes 160g
  • White wine vinegar, vinegar 2 teaspoons
  • Basil leaves 30g
  • 2 cloves of garlic
  • Olive oil 100ml
  • Parmesan cheese 50g
  • Pine nuts, walnuts, almonds, etc. 30g
  • Salt Adequate amount
  • Pepper Appropriate amount
How to make it:

1/ Wash the sun-dried tomatoes.
2/ Pour water into a pot, bring to a boil, add vinegar, add sun-dried tomatoes and boil for about 5 minutes, then drain in a colander. Once it has cooled down a little, remove the moisture with kitchen paper.

3/ Wash the basil leaves and drain them with kitchen paper or a dish towel.

4/ Grate the Parmesan cheese. (Omitted if using grated cheese)

5/ Lightly toast the pine nuts in a frying pan.

6/ Put the sun-dried tomatoes, basil leaves, pine nuts, and olive oil in a bowl and blend until smooth with a hand blender.

7/ Add Parmesan cheese and make it even smoother. Taste and add salt and pepper if necessary. If you want it to be smoother, add olive oil to make a paste of your choice.
