  • 150 g
    Chicken breast or thigh
  • Olive oil (appropriate amount)
  • 7.5 g
    *Parsley
  • 3.75 g
    *Coriander
  • 1.25 ml
    *Garlic cloves
  • 1.25 ml
    *Ginger
  • 3.75 ml
    *Cumin powder
  • 3.75
    *Paprika powder
  • 7.5 ml
    *Lemon juice
  • 18.75 ml
    *Olive oil
  • *Salt, to taste
  • *Pepper, to taste
Cooking time: 30 minutes
Ingredients:

For 4 people

  • 600 g chicken breast or thig
  • Olive oil: Appropriate amount for cooking

For the Charmoula Sauce:

  • *30 g parsley (2–3 tablespoons)
  • *15 g coriander (2 tablespoons)
  • *2 garlic cloves
  • *1 teaspoon ginger
  • *1 tablespoon cumin powder
  • *1 tablespoon paprika powder
  • *2 tablespoons lemon juice (juice of 1/2 lemon)
  • *5 tablespoons olive oil

 

How to make it:

1/ Finely chop the parsley and coriander. Mince the garlic and ginger.

2/ In a large bowl, combine all the seasonings marked with *. Mix well to prepare the charmula sauce.
5/ Cut the chicken breast into bite-sized pieces, then add them to the bowl with the sauce. Stir to coat the chicken evenly.

6/ Cover the bowl with plastic wrap and refrigerate it overnight. (If you’re short on time, you can skip this step, but it’s recommended when using chicken breast as it helps to tenderise the meat.)

7/ Heat the olive oil in a frying pan, add the chicken breasts, and fry both sides.

  • 🌶️ Don’t Worry About the Heat: Paprika powder adds vibrant color and flavor but isn’t spicy, so it’s perfect for everyone.
  • 🌿 No Coriander? No Problem!: If coriander isn’t available or you prefer not to use it, parsley works perfectly.
