Cooking time: 70 minutes (Excluding marinating time)
Ingredients:

For 4 people

  • Approximately 800g of Chicken drumsticks
  • * 3 tablespoons of Soy sauce
  • * 3 tablespoons of Sake or white wine
  • * 1 teaspoon of Ginger (minced)
  • * 2 cloves of Garlic (minced)
  • * 2 tablespoons of Sesame oil
  • 4 tablespoons of Potato starch
  • 1 Egg  (optional)
  • As needed: Vegetable oil or olive oil

 

How to make it:

1/ ​​​​​​​​​​​​​​Prepare the Chicken: Use a fork to poke a few holes in the chicken drumsticks. This helps the marinade soak in better.

2/ Marinate the Chicken: Place the chicken in a plastic bag, add the seasonings marked with ※, and massage well to coat. Let it sit in the refrigerator overnight, or for 1–2 hours if you’re short on time.

3/ Optional: Add an Egg: About 30 minutes before cooking, crack an egg into the bag, mix it well, and massage it into the chicken. This step is optional but makes the meat extra tender.

4/ Drain Excess Marinade: Place a strainer over a bowl and transfer the chicken into it to remove any excess marinade and egg.

5/ Prepare the Baking Tray: Line a baking tray with parchment paper and arrange the chicken pieces on it.

6/ Coat with Potato Starch: Lightly dust the chicken with potato starch, ensuring an even coating. Drizzle a small amount of vegetable oil or olive oil over the chicken.

7/ Bake in the Oven: Preheat the oven to 200°C (400°F) and bake the chicken for 40–50 minutes. Once the chicken is golden, crispy, and cooked through, it’s ready to serve!
