In France, it’s very common to serve a green salad with a mustard dressing—a true staple of everyday home cooking. I still remember the first time I tasted a homemade French mustard dressing prepared by a French mom friend. I was amazed by how delicious and well-balanced it was. Even though it contained mustard, the dressing wasn’t spicy at all. When I asked her why it tasted so mild and creamy, she told me, “Because you add plenty of olive oil.” And she was right 😊once the mustard is blended with enough olive oil, it becomes smooth, mellow, and full of gentle flavor. That perfect balance of mustard’s acidity and aroma coating a simple green salad felt almost magical to me. In this recipe, I’m sharing a version of that classic French mustard dressing you can easily make at home🌟creamy, not spicy, and perfect for everyday salads.

Ingredients:

For 3-4 people: 

Salad

  • 100–120 g of Frill Lettuce, Mixed Leaves, or Green Lettuce

Dressing

  • 3 tablespoons of Olive Oil
  • 1 tablespoon of White Wine Vinegar
    (Apple Cider Vinegar used in this recipe is also fine.)
  • 2 teaspoons of Dijon Mustard
  • 1 teaspoon of Minced Shallots (5 g)
  • A pinch of Salt
  • A pinch of Black Pepper

Topping

  • An appropriate amount of Walnuts
How to make it:

1/ Prepare the Lettuce: Wash the lettuce and soak it in water for about 10 minutes to crisp it up.

2/ Drain Well: Drain the lettuce thoroughly and tear it into bite-sized pieces.

3/ Mix the Mustard and Vinegar: In a bowl, combine the mustard and vinegar, and mix well.

4/ Add the Oil and Emulsify: Slowly add the oil while whisking to create a well-emulsified dressing.

5/ Season and Add Flavor: Stir in the minced shallots, salt, and black pepper.

6/ Finish Just Before Serving: Toss the lettuce with the dressing right before serving, and top with finely crushed walnuts.

A Simple Trick to Crisp Up Lettuce:
I learned this little tip from my mother-in-law: soaking lettuce in water for about 10 minutes makes the leaves wonderfully crisp. You’ll be surprised how the leaves perk up after a short soak 🥬.

I like tossing the lettuce directly in the dressing so everything gets evenly coated, but drizzling the dressing on top just before serving works beautifully too 🥗. If you prefer that style, make a little extra dressing so you can adjust the amount easily.

If the mustard feels too sharp or tangy, add a bit more olive oil to soften the flavor ✨. Feel free to tweak the ratio until it matches your taste! you can’t go wrong.
