This simple salad came to life during our first month in Dubai, when my family and I were staying in a hotel apartment with only limited kitchen tools. Using just a few pantry staples — canned chickpeas, tuna, and some easy-to-use fresh vegetables — it comes together in no time, making it perfect for busy days or those moments when you don’t want to spend much time cooking😊 Even without turning on the stove, it’s ready in just 10 minutes, and the combination of hearty chickpeas and savory tuna makes it satisfying enough to enjoy as a light meal or a versatile side dish.✨

Ingredients

Cooking time: 10 minutes
Ingredients:

For 3-4 people:

  • 400g (240g drained) of Canned Chickpeas
  • 80g (50g drained) of Canned Tuna
  • 2–3 of Cucumbers
  • 2 tablespoons of Mayonnaise
  • A pinch of Salt
  • A pinch of Black Pepper
  • Some of Lettuce (optional)
How to make it:

1/ Prepare the Chickpeas: Drain the canned chickpeas into a colander, rinse them lightly under cold water, and make sure to drain them well.

2/ Cut the Cucumbers: Dice the cucumbers into small cubes, about 1 cm (½ inch) in size, so they are roughly the same size as the chickpeas.

3/ Combine the Ingredients: In a large bowl, add the chickpeas, cucumbers, and tuna (make sure to drain the oil from the tuna first). Mix everything well until evenly combined.

4/ Add the Mayonnaise: Add the mayonnaise to the bowl and mix until all the ingredients are evenly coated. Taste and season with salt and black pepper as needed.

5/ Serve and Enjoy: Line a serving dish with lettuce and spoon the chickpea salad on top. Your salad is ready to serve!

⭐️ A Simple Alternative for Those Who Prefer to Avoid Mayonnaise: If you’re not a fan of mayonnaise, don’t worry! You can make a lighter, refreshing dressing by simply mixing a little vinegar into the oil from the tuna can. It’s delicious and adds a nice tangy flavor — adjust the amount to suit your taste.

⭐️When You Need “One More Dish”: This salad goes well with just about any main course, making it a great side dish when you want to add “just one more dish” to your meal.
