1/ Prepare the Avocados:Cut each avocado lengthwise around the pit and twist to separate. Then cut each half again lengthwise to make quarters. This method makes it easier to remove the pit and peel the skin by hand. Dice the avocado flesh into roughly 1 cm cubes.
2/ Blend into a Purée: Place the diced avocado in a blender or food processor. Add the juice of half a lime (or lemon) and blend until smooth. Tip: Adding the citrus juice early helps prevent.
3/ Add the Yogurt: Add the Greek yogurt and blend again until the texture becomes light and mousse-like.
4/ Season to Taste: Add a pinch of salt and pepper. Taste and adjust the seasoning, adding more salt or citrus if needed.
5/ Serve and Garnish: Spoon the mousse into small bowls or serving glasses. Top with small salad shrimp or smoked salmon, and finish with chopped herbs such as dill or chives.
