1/ Peel the potatoes and cut them into small dice.

2/ Dice the onion and bacon (pre-cut bacon works fine), and finely chop the parsley.

3/ In a bowl, whisk the eggs and cream together, then stir in the cheese. Season with nutmeg, salt, and pepper, and mix well.

4/ Heat olive oil in a frying pan. Sauté the onions and bacon first until fragrant, then add the potatoes and continue frying until golden and crispy.

5/ Once the potatoes are cooked through and crispy, pour in the egg mixture from the bowl. Stir gently to combine.

6/ Sprinkle with finely chopped parsley (if available) for a touch of color. Serve hot on a plate, garnished with cornichons (if available).
