1/ Prepare and Boil the Potatoes: Peel the potatoes, cut them into bite-sized pieces, place them in a pot, add enough water to cover them, and boil until tender.
2/ Chop the Vegetables and sausages: Cut the carrots, green onions, celery root and sausages into 1 cm cubes. Finely chop the onions.
3/ Cook the Bacon: Melt the butter in a large pot over medium heat. Add the bacon and fry until it releases its aroma.
4/ Sauté the Onions: Add the chopped onions to the pot and fry until translucent.
5/ Add and Cook the Vegetables: Add the remaining vegetables to the pot, stir-fry lightly, then add 500 ml of water and bring to a boil.
6/ Season and Simmer: Add the bouillon, bay leaf, allspice, marjoram, salt, and pepper. Stir well, reduce the heat to low, cover, and simmer.
7/ Mash the Potatoes: Once the potatoes from Step 1 are soft, carefully drain most of the boiling water into a separate container, but keep some of it aside for later use. Mash the potatoes using a masher until smooth.
8/ Thicken the Soup: Add the mashed potatoes to the large pot. Gradually add the reserved boiling water until the desired thickness is reached. Simmer for a few minutes.
9/ Add the Sausages: Add the sausages to the pot and simmer for a few more minutes. Adjust the seasoning with salt and pepper.
10/ Prepare the Toasted Bread (Optional): If desired, cut the bread into 1 cm cubes. Heat a frying pan, add butter, and fry the bread cubes until golden and crispy.
11/ Serve and Garnish: Serve the soup in bowls, top with the toasted bread, and garnish with finely chopped parsley. Enjoy!
