Homemade Burger Sauce
1/ Make the Patties: In a bowl, combine the ground beef, salt, black pepper, and soy sauce. Mix well, then shape into flat hamburger patties.
2/ Rest the Patties (Optional): Wrap each patty individually in plastic wrap and refrigerate for 15โ30 minutes.
This helps prevent them from losing shape and drying out.
3/ Prepare the Special Sauce: In a bowl, mix together the mayonnaise, tomato paste, mustard, lemon juice, and salt until smooth.
4/ Cook the Bacon: Heat a frying pan without oil, add the bacon, and cook until crispy. Remove and set aside.
5/ Prepare the Vegetables: Slice the tomato into rounds and wash the lettuce leaves, drying them well.
6/ Cook the Patties โ First Side: In a separate large frying pan, heat a thin layer of oil over medium heat. Cook the patties for about 2โ2ยฝ minutes on the first side until browned.
7/ Cook the Patties โ Second Side: Flip the patties and cook the other side for 1ยฝโ2 minutes until browned.
8/ Steam and Melt the Cheese: Cover the pan with a lid, reduce the heat to low, and steam for 2โ3 minutes until cooked through. Just before turning off the heatโor while still on lowโplace a slice of cheddar cheese on each patty, cover again, and let it melt for 30 seconds to 1 minute.
9/ Fry the Eggs: Using the same pan you used for the bacon, cook the eggs to your desired doneness.
10/ Assemble the Burgers: Slice the buns in half. Spread the special sauce on the bottom half, then layer with lettuce, a patty, tomato slices, bacon, andโif desiredโa fried egg. Add more sauce if you like, then top with the other half of the bun.
11/ Serve and Enjoy: Plate with French fries or a salad (such as tuna coleslaw) and serve immediately.

โญ Keep Patties Flat & in Shape: Burgers tend to puff up in the center while cooking, but you can prevent this by gently pressing a small indentation in the middle when shaping. For an even better result, wrap each patty tightly in plastic wrap ๐ง, arrange them in a single layer, and refrigerate for 15โ30 minutes. This helps prevent drying, keeps their shape, and gives you that beautiful searโbringing your patties closer to a true burger-joint look and texture.
โญ Go for a 100% Beef Patty ๐ฅฉ: While mixed ground meat works well, using 100% beef creates a more authentic flavor with juicy, rich umami.
โญ Customize the Fillings ๐ฅ: This recipe skips pickles, but you can add them if you likeโor try extras such as avocado, grilled vegetables, or caramelized onions for your own signature burger.
โญ Choose Your Buns Wisely ๐ฅฏ: In my local Berlin supermarket, I always pick up my favorite brioche buns. Theyโre soft, slightly sweet, and pair perfectly with juicy patties and salty bacon.
โญ Donโt Forget the Sides ๐: Nothing pairs better with a burger than crispy fries! ย Check out my French fries recipe here. ๐Currywurst โ Grilled sausage and tomato curry sauce served with fries
