This chilled carrot soup is perfect for summer ☀️ light, refreshing, and packed with flavor. While it’s delicious warm, letting it rest overnight in the fridge brings out its full potential, making it especially satisfying on hot days. Known as “3C soup” for its blend of carrot, coriander, and cumin, this recipe also includes garlic 🧄 and ginger🫚, giving it a healthy, aromatic twist with a subtle ethnic flair. 😊

Ingredients

Cooking time: Approximately 50 minutes *excluding cooling time in the refrigerator
Ingredients:

For 4 – 6 people:

  • 500g of Carrots
  • 75g of Onion (about 1/2 onion)
  • 1 Clove of Garlic
  • 2 Teaspoons of Ginger
  • Appropriate amount of Olive Oil
  • 500ml of Water
  • 2.5 Teaspoons of Bouillon
  • 1 to 2 Tablespoons of Coriander (about 15g, to taste)
  • 1 Teaspoon of Cumin Powder
  • Appropriate amount of SaltAppropriate amount of Pepper
How to make it:

1/ Prepare the Vegetables: Peel the carrots and cut them into small pieces.
2/ Chop the Aromatics: Finely chop the onion, garlic, and ginger.
3/ Sauté the Base:  Heat olive oil in a pot. Add the chopped onion, garlic, and ginger, and sauté over medium heat for about 5 minutes until fragrant.
4/ Add the Carrots: Add the carrot pieces and lightly sauté them together with the aromatics.
5/ Simmer the Soup: Pour in the water and add the bouillon. Bring to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20 minutes, or until the carrots are tender.

6/ Let It Cool Slightly: Once the carrots are soft, turn off the heat and remove the pot from the stove. Allow the soup to cool slightly before blending.

7/ Blend with Spices: Add the cumin and coriander leaves. Blend the soup with a hand mixer until smooth and creamy.
8/ Season to Taste: Taste the soup and adjust the seasoning with salt and pepper if needed.

9/ Chill and Serve: Let the soup cool to room temperature, then refrigerate for at least 2 hours or overnight before serving.Chilled Carrot Soup
