Ingredients

    Potato
  • 1
    Spring onion or long onion (white part)
  • 120 g
    Onion (approx.)
  • 1
    Tablespoon butter or olive oil, etc.
  • 500 ml
    Water
  • 2
    Teaspoons Bouillon
  • 100 ml
    Milk
  • 100 ml
    Crème fraiche *or fresh cream
  • 1
    Salt Appropriate amount
  • 1
    Pepper Appropriate amount
  • 1
    A little nutmeg (if available)
  • 1
    Appropriate amount of parsley or civet (if available)
Cooking time: Approximately 45 minutes *Excluding time to cool in the refrigerator
Ingredients:

For 4 people

  • Potato 500g
  • 1 spring onion or long onion (white part)
  • 1 onion (approx. 120g)
  • 1 tablespoon butter or olive oil, etc.
  • Water 500ml
  • Bouillon 2 teaspoons
  • Milk 100ml
  • Crème fraiche 100ml *or fresh cream
  • Salt Appropriate amount
  • Pepper Appropriate amount
  • A little nutmeg (if available)
  • Appropriate amount of parsley or civet (if available)
How to make it:

1/ Finely chop the green onions, onions, and potatoes.
2/ Heat the butter in a pot, then add the onions and green onions and fry for about 5 minutes until translucent.

3/ Add potatoes and stir fry a little while stirring.

4/ Add water and bouillon, reduce heat to medium-low and simmer for about 30 minutes.

5/ Once the potatoes are soft, remove from the heat and blend with a hand mixer until smooth.

6/ Add milk, crème fraîche, and nutmeg and mix.


7/ Return to the heat and simmer on low heat for about 5 minutes, then adjust the taste with salt and pepper, remove from the heat and let cool.
8/ Place the pot in the refrigerator to cool for a few hours.
9/ Pour the soup into a bowl, chop some parsley or chivettes, put it on top of the soup, and enjoy.

★If you use crème fraîche, you can enjoy a relaxing texture. If you prefer a smoother texture, you can use fresh cream or milk.
★If you make it the day before and store it in the refrigerator, the flavors will soak in and it will be even more delicious. Perfect for summer menus.
★Please try it as a warm soup in the cold winter.
