A pizza called Flammkuchen in Germany and Tarte flambée, which is famous in the Alsace region of France. This is a menu often found in German restaurants. This pizza is so popular that it can even be found in the frozen pizza section of supermarkets. The dough ingredients are simple and can be made in a short time, so you can easily make it at home. It goes perfectly with German white wine, Riesling and beer. It’s also perfect as a snack.

Cooking time: 50 minutes
Ingredients:

Serves 2-4 people

For fabric:

  • 300g flour
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • Water 200ml

Ingredients:

  • Crème fraîche (Crème Epes) 200ml *or sour cream or your favorite fresh cheese, cream cheese
  • Bacon 250g
  • 1 onion
  • Chives or all-purpose green onion 10-20g
  • Nutmeg appropriate amount
  • Pepper as needed
How to make it:

1/ Make the dough: Mix all the ingredients for the dough in a bowl and knead well until smooth. Cover with a kitchen towel and let stand for 15 minutes.

2/ Make the sauce: In a separate bowl, add crème fraîche, nutmeg, and pepper and mix well.

3/ Cut the bacon (pre-cut bacon is used in this recipe) and thinly slice the onion. Finely chop the ciblet (or all-purpose green onion).
4/ Place a parchment paper on the work surface, lightly sprinkle flour on it (not listed in ingredients), spread out the dough, and then place the dough on the baking sheet.

5/ Spread crème fraîche on the dough and top with onions and bacon.

6/ Place the baking sheet in an oven preheated to 210℃ and bake for about 20 minutes until crispy.
7/ Finish by sprinkling with shiveret and seasoning with pepper.

★If you have difficulty obtaining crème fraîche (crème épes), try using sour cream, cottage cheese, or cream cheese if you don’t like sour tastes.
★Chives are a herb belonging to the Liliaceae family and are often used in German cooking. I don’t think it’s very familiar in Japan, but it’s a member of the green onion family, so you can substitute it with all-purpose green onions or morning onions! Or you can sprinkle some parsley on top.
★It’s also great to enjoy different flavors by using your favorite ingredients!
