As autumn and winter arrive, there’s nothing more comforting than a bowl of hearty lentil soup. Made with nutrient-rich lentils and a classic soup vegetable mix (Suppengrün), this dish is wholesome and satisfying. Lentils, though not common in Japan, are incredibly easy to prepare and offer a fluffy texture when cooked. Packed with ingredients, this soup is a meal in itself. Add sausages for extra richness and a savory touch. Perfect for both vegetable lovers and meat enthusiasts, this cozy soup is just what you need to warm up on a chilly day.     Lentils
  • 300 ml
    Water
  • 6.25 g
    Bouillons
  • 75 g
    Potatoes
  • 100 g
    Carrots
  • 15 g
    Celeriac
  • 15 g
    Leek
  • 50 g
    Sausages
  • Salt, to taste
  • Pepper, to taste
  • 7.5 ml
    Vinegar
  • 3.75 g
    Butter
  • Parsley, to taste
Cooking time: 60 minutes
Ingredients:

For 4 people

  • Lentils of 200g
  • Water of 1.2L
  • Bouillon of 5 teaspoons
  • Potatoes of 300g
  • Carrots of 400g
  • Celeriac of 50–70g (optional if unavailable)
  • Leek or Green Onion of 50–70g
  • Sausages of 200–300g (optional)
  • Salt to taste
  • Pepper to taste
  • Vinegar of 2 tablespoons (e.g., white wine vinegar, apple cider vinegar)
  • Butter of 1 tablespoon
  • Parsley to taste (for garnish)

How to make it:

1/ ​​​​​​​​​Prepare the lentils:
Wash the lentils and drain well. Place them in a pot with 1.2L of water and simmer for about 20 minutes. Once it begins to boil, add the bouillon.

2/ Prepare the vegetables:
Wash the potatoes, carrots, celeriac, and leeks. Dice them into 1cm cubes. Finely chop the parsley.

3/ Sauté the vegetables:
In a separate pot, heat 1 tablespoon of butter. Add all the vegetables except for the parsley and sauté until lightly softened.

4/ Cook the soup:
Add the lentil soup to the pot with the sautéed vegetables. Simmer over medium heat for another 20 minutes.

5/ Prepare the sausages (optional):
Slice the sausages into rounds and either fry them separately or add them directly to the soup to cook along with the vegetables.

6/ Season the soup:
Adjust the flavor with white wine vinegar (or your choice of vinegar), salt, and pepper to taste.

7/ Serve and enjoy:
Ladle the soup into bowls, garnish with chopped parsley, and add the fried sausages if desired. Enjoy your hearty lentil soup!
