This no-bake cherry tiramisu is a refreshing summer twist on the classic dessert. Made with fresh cherries and creamy mascarpone, it’s light, naturally sweet, and easy to prepare. Gently pressing the cherries helps bring out just enough juice to soak into the layers without overpowering the fruit. The smooth texture and fruity flavor were such a hit at home, I was asked to make it again right away. You can use individual glasses or a larger Pyrex dish—whatever you have on hand.😊

Ingredients

Cooking time: 30-40 minutes
Ingredients:

For 4-6 people:

For the Marinated Cherries

  • 200–250g of Cherries
  • 2 teaspoons of Cane Sugar or White Sugar
  • 1 teaspoon of Lemon Juice

For the Mascarpone Cream

  • 250g of Mascarpone 
  • 2 Eggs2 tablespoons of Cane Sugar
  • A small amount of Vanilla Sugar or Vanilla Extract (optional)

For the Biscuit Layer

  • 6 to 8 pieces of Ladyfingers (or store-bought biscuits)
  • 50–70ml of Marinated Cherry Juice or Cherry Juice
    ※ For an adult version, you may add 1–2 teaspoons of Kirsch (optional)
How to make it:

1/ Prepare the cherries: Remove the pits from the cherries and cut them in halves or quarters. Set aside a few whole cherries for decoration.

2/  Marinate the cherries: Place the cut cherries in a bowl, add the sugar and lemon juice, and gently mash them with a fork. Let them sit in the refrigerator for 15 to 30 minutes until some juice is released.Cherries sugar lemon juice

3/ Make the mascarpone cream: Separate the eggs into yolks and whites. Whisk the yolks with the sugar until thick and pale. Add the mascarpone and mix until smooth.

4/ Fold in the meringue: In a separate bowl, beat the egg whites until stiff peaks form. Fold the meringue into the mascarpone mixture in two additions, mixing gently with a spatula.

5/  Assemble the layers:  Cut your sponge fingers or ladyfingers into bite-sized pieces so they fit neatly into the glass or dish.

  1. Start by spreading a thin layer of mascarpone cream on the bottom of your dish.

  1. Place the biscuits on top, briefly soaked in the cherry juice.

  1. Add another layer of cream, then scatter the marinated cherry pieces on top.

  1. Finish with a final layer of cream and smooth the surface.

6/ Chill: Cover and chill in the refrigerator for at least 3 hours. If possible, let it rest for half a day so the flavors and texture can fully develop.

7/ Decorate before serving: Just before serving, top with the reserved cherries, chopped almonds or pistachios, and a few mint leaves if desired.

🌟 Seasonal Tips for a Fresh Cherry Twist

⭐️ Enjoy with Seasonal Fruit: Some cherries—especially the firm, dark ones often sold in Germany—don’t release much juice on their own. Just give them a gentle mash to help bring out their natural goodness 🍒 If you’re in a hurry, bottled cherry juice works well too.😉
And if you’d like to add a grown-up twist, a splash of Kirsch or your favorite liqueur can bring a lovely depth of flavor—totally optional, of course.

⭐️ Different Glasses, Different Vibes: We made this dessert using two types of glasses. Straight-sided ones show off the clean layers and give a more elegant look, while round glasses add a soft, cozy feel. Depending on the size of your glass, you might get two or three layers..have fun playing around with it!🩷
