Pizza Quattro Formaggi is a favorite for both kids and adults—a must-try for cheese lovers. The fluffy, homemade crust takes some time to prepare, but the freshly baked texture is absolutely worth it! In our family, where pizza nights are a tradition, Quattro Formaggi is always a top request. We typically go for Gorgonzola, mozzarella, Parmesan, and Emmental, but here’s the best part—your choice of cheese can transform the flavor entirely. Try experimenting with your favorites to create a combination that’s uniquely yours. The joy of this pizza lies in its endless possibilities and the little surprises that each variation brings.

Ingredients

Cooking time: 3-4h
Ingredients:

For 4 people

For the Dough:

  • 250g of Flour
  • 160ml of Water
  • 10ml of Olive oil (2 teaspoons)
  • 5g of Salt (1 teaspoon)
  • 2g of Dry yeast

For the Topping (Cheese):

  • 80g of Gorgonzola cheese
  • 80g of Parmesan cheese
  • 125g of Mozzarella cheese
  • 100g of Emmental cheese
How to make it:

Making the Pizza Dough:

1/ Place the flour and dry yeast in a bowl, add half of the water (about 80ml), and mix with a spoon (a silicone or wooden spoon is recommended for easier handling). Once the water is absorbed, gradually add the remaining water along with the salt and olive oil. Knead the dough until it comes together.

2/ Transfer the dough to a work surface and knead it until the surface becomes smooth (about 10 minutes). Shape the dough into a ball, cover it with a bowl, and let it rest for 10 minutes.

Folding the Dough:

3/ Lightly dust the work surface with flour and shape the dough into a rectangle. Fold one side toward the center, followed by the other side. Then, fold the top edge down toward the bottom edge and gently round the dough. Repeat this process one more time, shaping the dough into a smooth, round form.

4/ Coat a clean bowl with olive oil, place the dough inside, and cover with a kitchen towel or plastic wrap. Let it rise for 2–3 hours, or until the dough has tripled in size.

Preparing the Cheese:

5/ While the dough is rising, place the mozzarella cheese in a colander lined with kitchen paper to remove excess moisture. Once the moisture is removed, cut the mozzarella and Gorgonzola cheese into bite-sized pieces.

Shaping the Pizza:

6/ Line a baking sheet with parchment paper and lightly coat it with olive oil. Transfer the risen dough to the work surface, then press it into a circular shape with your fingers. If the dough shrinks back, cover it with a kitchen towel and let it rest for 10 minutes before stretching it again.

⭐️ Secrets to an Elevated Quattro Formaggi Pizza ⭐️

⭐️Baking Time: Oven baking times may vary depending on your oven model and conditions. Keep an eye on the pizza and adjust as needed.

⭐️With Honey: Honey and cheese are a perfect match! Drizzle some honey on your pizza to enjoy a delightful combination.

⭐️Toppings: For a richer flavor, try adding walnuts or other nuts, or even slices of pear. Feel free to experiment! 😊

⭐Cheese Variety: You can substitute Gorgonzola with other blue cheeses, or replace Emmental with Gruyère or Cheddar for different flavors.

⭐️Flavor Variations: Feeling adventurous? Add a small amount of bold-flavored cheeses like Taleggio or Raclette for a deeper, more intense taste.

⭐Cheese Quantity: We’re big cheese lovers, so the cheese quantity might be on the generous side. Adjust the amounts to your liking.

⭐Moisture in Cheese: Mozzarella has a high moisture content, so pat it dry thoroughly with kitchen paper to prevent the pizza from becoming watery and to keep the overall balance just right.
