    Onion (1-2 pieces)

    Tablespoons butter or coconut oil (adjust to taste)

  • Salt Appropriate amount
  • Pepper Appropriate amount
  • 3
    Tablespoons of apple cider vinegar/white wine vinegar (add vinegar to your preference)
  • 3
    Teaspoons of bouillon (according to the amount of water)
  • 800 ml
    Water
Cooking time: 50 minutes
Ingredients:

For 4 people

  • 1 pumpkin (approx. 600g)
  • Onion 120g (1-2 pieces)
  • 1 apple
  • 2 tablespoons butter or coconut oil (adjust to taste)
  • Sugar 1 tablespoon
  • Salt Appropriate amount
  • Pepper Appropriate amount
  • 3 tablespoons of apple cider vinegar/white wine vinegar (add vinegar to your preference)
  • 2 to 3 teaspoons of bouillon (according to the amount of water)
  • Water 600-800ml
How to make it:

1/ Cut the pumpkin. Peel the skin, remove the seeds and cut into small pieces.
2/ Finely chop the onions.
3/ Cut the apple into small pieces (you can leave the skin on or remove it, depending on your preference).
4/ Put butter in a pot and fry onions.

5/ Add pumpkin, apple, and sugar and fry for another 5 minutes.

6/ Add apple cider vinegar, water, and bouillon, cover, and simmer over medium heat for about 20 minutes.

7/ When the ingredients become soft, turn off the heat, remove the pot, and use a hand blender to puree the ingredients.

8/ Return the pot to the heat, season with salt and pepper, and it’s done!

★To finish, you can top with herbs such as parsley, walnuts or pumpkin seeds, or add fresh cream or sour cream if you like.
★Please enjoy it with bread such as toasted baguette.
★You can enjoy it not only as a hot soup, but also as a cold summer soup.
★If you have a soup jar, you can also use it as a lunch box. My child’s friend from school brought this soup as a lunch box. When I tasted it, I heard that it was very delicious, so I started making it upon request. Since then, this soup has become a staple in our house.
