1/ Prepare the ingredients: Gently rinse the lamb’s lettuce and soak it in water for about 10 minutes to refresh the leaves. Then drain well and pat dry. Cut the tomatoes into bite-sized pieces as you like.
2/Make the salad base: In a large bowl, whisk together the raspberry vinegar, olive oil, salt, and black pepper. Add the lamb’s lettuce and gently toss to coat it evenly with the dressing.
3/ Finish and serve: Add the chopped tomatoes and toss lightly once more. Transfer the salad to a serving plate. If you like, add a small amount of mixed nuts or feta cheese to the side for a finishing touch.
