Turkish baked potato, known as Kumpir, is a popular Turkish street food that’s creamy, cheesy, and fully loaded.🥔 A fluffy baked potato is split open, mixed with melted butter and cheese, then piled high with your choice of vegetables, meats, and other toppings. Finish it off with your favorite sauces like mayonnaise or ketchup, and you’ve got a hearty, flavor-packed meal.🩷 In Berlin’s markets and street stalls, the potatoes are so huge you’ll be full after just one! Just like hand-rolled sushi, you can mix and match toppings, making Kumpir a fun dish to enjoy at home with friends and family.😊

Ingredients

Cooking time: 1 hour 30-40 minutes
Ingredients:

For 4 people

  • 4–8 Potatoes (adjust quantity to preference)
  • Olive Oil, as needed
  • Salt, to taste
  • Butter, as needed
  • 100–200 g Shredded Cheese of your choice
  • About 200 g Wieners or Sausages
  • 1 Cucumber
  • About 200 g Cherry Tomatoes
  • About 50 g Black Olives
  • About 70 g Kidney Beans
  • About 70 g Canned Corn
  • Mayonnaise, as needed
  • Ketchup, as needed
How to make it:

1/ Prepare the Potatoes: Wash the potatoes, place them on an oven plate lined with parchment paper, brush with olive oil, and sprinkle with salt.

2/ Pierce the Potatoes: Prick the surface of each potato in several places with a fork.

3/ Bake Until Tender: Bake in an oven preheated to 200°C for 1 to 1.5 hours. Check with a fork or toothpick to see if it’s cooked through—it should pierce easily.

4/ Prepare Corn and Beans: Place the corn and kidney beans in a small bowl.

5/ Cook the Sausage: Cut the sausage into small pieces and quickly fry them in a frying pan.

6/ Chop Fresh Vegetables: Cut the tomatoes, cucumbers, and black olives into small pieces and place them in separate bowls.

7/ Slice Open the Potatoes: Remove the potatoes from the oven, cut them in half without cutting all the way through, and gently open the cut with a knife or fork.

8/ Mix in Butter and Cheese: Loosen the inside of the potatoes with a fork, then add the butter and shredded cheese. Mix well until melted and creamy.

9/ Add Mayonnaise: Spread mayonnaise over the potato mixture.

10/ Add Your Favorite Toppings: Pile on your choice of toppings—corn, beans, sausage, vegetables, or anything you like.

11/ Finish with Sauces: Drizzle with ketchup and extra mayonnaise before serving.

🌟The Fun Part: Kumpir Toppings🌟

⭐️Get Creative with Toppings: Feel free to add your favorite toppings—shredded carrots, green peas, canned tuna, cabbage, purple cabbage, and more. It’s also a great way to use up leftover side dishes from the previous night’s dinner (like fried chicken) or vegetables sitting in your fridge.

⭐️Adjust the Potato Quantity: The number of potatoes you use will depend on their size and how much you can eat—adjust to suit your appetite.

⭐️Try Alternative Sauces: Kumpir is also delicious topped with sour cream or with the yogurt-and-cucumber sauce featured in our Turkish zucchini fritters recipe.

⭐️Watch the Baking Time: Baking time can vary depending on your oven model and conditions, so keep an eye on your potatoes and adjust the time as needed.
