1/ Prepare the vegetables: Thinly slice the onion, cut the carrot into your preferred size, and finely mince the garlic.
2/ Sauté the onion and garlic: Heat the olive oil in a pot over low to medium heat. Add the onion and garlic and cook slowly until softened.
3/ Add the carrot: Once the onion becomes translucent, add the carrot and continue to sauté.
4/Add the spices: Stir in the cumin, paprika, and cinnamon powder, and cook briefly until fragrant.
5/ Simmer with tomatoes and wine: Add the canned tomatoes and white wine. Simmer uncovered over medium heat for 5–10 minutes.
6/ Add the lamb: Add the shredded lamb, cover with a lid, and simmer gently over low heat for another 30 minutes.
7/ Adjust the seasoning: Taste the stew and season with salt and black pepper. If the acidity from the tomatoes is too strong, add a little honey to balance the flavor.
8/ Finish and serve: Drizzle with a little more olive oil if desired. Serve hot with couscous, crusty bread, or rice!
