After enjoying our Roast Leg of Lamb – Gigot d’Agneau 🐑 (featured on Umami), here’s a delicious way to give the leftovers a second life. This Moroccan-style tomato stew, simmered with tender lamb and colorful vegetables, pairs perfectly with couscous. It’s a hearty, comforting dish that makes the next day’s meal just as exciting as the feast itself!

Cooking time: 75 minutes
Ingredients:

For 3-4 people

  • About 300g of Leftover Lamb (see Roast Leg of Lamb recipe for details)
  • 1 Onion (thinly sliced)
  • 1 Carrot
  • 1 400g Can of Tomatoes (or 1 ripe Tomato, diced)
  • 1 Clove of Garlic
  • 2 Tablespoons of Olive Oil
  • ½ Teaspoon of Cumin or Ground Cumin
  • 1 Teaspoon of Paprika
  • A Pinch of Ground Cinnamon (optional)
  • 4 Tablespoons of White Wine
  • Salt, to taste
  • Black Pepper, to taste

How to make it:

1/ Prepare the vegetables: Thinly slice the onion, cut the carrot into your preferred size, and finely mince the garlic.

2/ Sauté the onion and garlic: Heat the olive oil in a pot over low to medium heat. Add the onion and garlic and cook slowly until softened.Onion garlic

3/ Add the carrot: Once the onion becomes translucent, add the carrot and continue to sauté.

4/Add the spices: Stir in the cumin, paprika, and cinnamon powder, and cook briefly until fragrant.

5/ ​​Simmer with tomatoes and wine: Add the canned tomatoes and white wine. Simmer uncovered over medium heat for 5–10 minutes.

6/ Add the lamb: Add the shredded lamb, cover with a lid, and simmer gently over low heat for another 30 minutes.

7/ Adjust the seasoning: Taste the stew and season with salt and black pepper. If the acidity from the tomatoes is too strong, add a little honey to balance the flavor.

8/ Finish and serve: Drizzle with a little more olive oil if desired. Serve hot with couscous, crusty bread, or rice!
