1/ Blend the beets: Roughly chop the cooked beets and place them in a blender. Add the lemon juice and olive oil, then blend until smooth. At this stage, blend the beets on their own.
2/ Add the cheese and crème fraîche: Once the beets are smooth, add the Chavroux and crème fraîche. Blend again until fully combined and creamy. If needed, scrape down the sides with a spatula during blending.
3/ Season to taste: Season with salt and pepper. You can also add a little more lemon juice if you like a brighter flavor.
4/ Chill and serve: Spoon the mixture into small glasses and smooth the surface. Chill in the refrigerator for 15–30 minutes. Just before serving, garnish with herbs, nuts, or any toppings you like
