I had some Chavroux (a mild, creamy French goat cheese) and crème fraîche left in the fridge, so I tried adapting a beet version of an avocado mousse I used to make. The result is a simple, refreshing dish with the natural sweetness of beets, a touch of tang, and a smooth, creamy texture. Perfect as a chilled summer starter, this mousse adds color to the table and works beautifully for apéritifs or entertaining. Served in small glasses, its vivid pink hue brings a cheerful, elegant touch to your plate.✨

Cooking time: 10 minutes
Ingredients:

For 4 people

  • 200–240g of Cooked Beets (such as vacuum-packed or canned)
  • 100g of Chavroux (fresh goat cheese)
  • 2 tablespoons of Crème Fraîche (approx. 30g)
  • 2 teaspoons of Olive Oil
  • 1 teaspoon of Lemon Juice
  • Salt and Pepper, to taste
  • Garnish: Herbs, Nuts, or other toppings of your choice
How to make it:

1/ Blend the beets: Roughly chop the cooked beets and place them in a blender. Add the lemon juice and olive oil, then blend until smooth. At this stage, blend the beets on their own.

2/ Add the cheese and crème fraîche: Once the beets are smooth, add the Chavroux and crème fraîche. Blend again until fully combined and creamy. If needed, scrape down the sides with a spatula during blending.
