Ingredients

Cooking time: Approximately 60 minutes
Ingredients:

For 4 people:

  • 3 eggs
  • 100 g flour
  • 300 ml milk
  • 200 ml crème fraîche (or sour cream, fresh cream, or milk)
  • 100 g shredded cheese (or more, as desired)
  • 100 g smoked salmon
  • 1 leek (about 250 g), finely sliced
  • 2 tbsp butter
  • Salt
  • Freshly ground black pepper
How to make it:

1/Prepare the Pie Dish: Grease a 26cm pie plate with butter. Set aside.
2/ Chop the Green Onions: Finely chop the green onion (or leeks, depending on what you’re using).

3/ Sauté and Simmer the Onions: Heat the butter in a frying pan over medium heat. Add the chopped green onions and sauté briefly. Then cover the pan, reduce to low heat, and let them simmer for about 10 minutes until soft.
4/ Season the Onions: Season the cooked onions with salt and pepper to taste. Turn off the heat and set aside.
5/ Make the Egg Mixture: In a large bowl, whisk together the eggs, milk, and crème fraîche until well combined.
6/ Add the Flour and Seasoning: Gradually add the flour while whisking to avoid lumps. Season the mixture with a little more salt and pepper.
7/ Mix in Cheese and Onions: Add the shredded cheese and the cooked green onions to the egg mixture. Stir gently to combine.
8/ Assemble the Quiche: Pour the mixture into the prepared pie plate. Cut the smoked salmon into bite-sized pieces and scatter them evenly on top.
9/ Bake: Bake in a preheated oven at 180°C (356°F) for 35–40 minutes, or until the quiche is set and golden on top
