For 4 people:
1/ Prepare the Vegetables: Cut the leeks, potatoes, and carrots into small, even pieces so they cook evenly.
2/ Add Water: Place the chopped vegetables in a pot and add enough water to just cover them. Be careful not to add too much water, as this can make the soup taste watery.
3/ Simmer Until Soft: Heat the pot and simmer over medium heat until the vegetables are soft and tender. If using bouillon, add it at this stage and let it dissolve while simmering.

4/ Blend Until Smooth: Remove the pot from the heat and blend the vegetables with a hand blender until the soup becomes smooth and creamy.

5/ Season and Reheat: Add salt and pepper to taste. Return the pot to low heat to warm the soup gently before serving.

🌟Simple Tips and Serving Ideas🌟
⭐️Keep It Simple — Let the Vegetables Shine: If you want to fully enjoy the natural flavor of the vegetables, seasoning with just salt and pepper is enough.
However, if you prefer a deeper taste, you can add bouillon to enhance the flavor.
⭐️Add Creaminess (Optional): For a richer version, you can add a spoonful of fresh cream or sour cream.
You can also top the soup with your favorite nuts or crispy croutons for extra texture.
⭐️Turn It into a Light Meal: Serve this vegetable potage with a green salad, ham, prosciutto, bread, or grissini.
Paired with simple sides, it becomes a satisfying yet light meal.
⭐️A Taste of French Home Cooking: This potage was first made for me by my mother-in-law after a heavy Christmas meal, when my stomach needed something gentle and comforting. Since then, it has become my children’s favorite soup, and in our family, we call it Mamie’s Soup. For me, this dish captures the warmth and simplicity of French home cooking.😊
