Remove from the heat. Add the butter and grated lemon zest, stirring until smooth. Transfer the lemon curd to a clean container, let it cool, then refrigerate until completely chilled.

3. Make the Ricotta Cream:
Place the drained ricotta in a bowl. Add the sugar and stir until smooth and creamy. Refrigerate until ready to assemble.

4. Assemble:
Spoon the ricotta cream into serving glasses, then top with the chilled lemon curd.
