Summer dessert collection

Summer is the season when a refreshing dessert becomes especially irresistible. For this collection, I’ve selected six of my favourite desserts from the recipes I’ve shared on Atsuko’s Table. From no-bake treats to refreshing berry desserts and simple baked cakes that are easy to make even during the warmer months, each recipe is perfect for summer.

Whether you’re enjoying a relaxing afternoon tea with your family or preparing a dessert for guests, I hope you’ll find some new favourites to try.

No-Bake Mascarpone Yogurt Cream with Berries

This is one of our family’s favourite summer desserts, and it appears on our table again and again throughout the season. Light mascarpone and Greek yogurt are combined with finely chopped chocolate to create a creamy Stracciatella-style dessert. Top it with your favourite seasonal berries or fruit, and it instantly becomes an elegant dessert for entertaining. Whenever I surprise my family with it after dinner, everyone is delighted. 😊

Easy Layered Ricotta and Lemon Curd Dessert

It’s amazing how such a simple dessert can be made with just a handful of ingredients. The delicate sweetness of ricotta pairs beautifully with the bright, tangy flavour of homemade lemon curd, creating a dessert that’s both elegant and refreshing. The very first time my husband tasted it, he couldn’t hide his excitement and immediately said, “This is delicious!” Since then, it has become one of our family’s favourite desserts.

Panna Cotta with Berry Sauce – A Sweet Discovery in Florence

After tasting an unforgettable panna cotta in Florence, I wanted to recreate that experience at home. The silky, creamy panna cotta pairs beautifully with a homemade berry sauce that adds just the right balance of sweetness and acidity. When I served it to a friend, she especially loved the berry sauce, and my husband even thought it was professionally made. Although it looks elegant enough for a special occasion, it’s surprisingly easy to prepare and doesn’t require an oven.

No-Bake Strawberry & Berry Cheesecake

I created this cheesecake after countless rounds of testing, determined to achieve the beautiful pink colour I had imagined. Every adjustment brought me a little closer until I was finally happy with both its appearance and flavour. The creamy texture, fresh strawberries and berries, and vibrant colour make it hard to believe it’s a no-bake dessert. It has become a favourite with my family, and it’s still one of the desserts I enjoy making again and again.

Blueberry Yogurt Flan

This recipe was inspired by a video that a friend sent me. I wanted to create a lighter dessert that you could happily enjoy any day of the week. By using almond flour and rice flour, it became naturally gluten-free and lactose-free while still being wonderfully satisfying. The combination of blueberries and yogurt is fresh and refreshing, making it perfect for breakfast or an afternoon treat during the warmer months. Both my husband and I loved it, and it has become one of the recipes I make time and time again.

Easy Cherry Cake with Fresh Cherries – French-Inspired

I fell in love with the simple cherry cakes enjoyed in French homes and wanted to create an easy version that anyone could make. Fresh seasonal cherries take centre stage, surrounded by a soft, tender cake made with everyday ingredients. It’s delicious while still warm from the oven and just as lovely the next day, when the texture becomes even softer. Served with a cup of coffee or tea, it’s the kind of cake that makes you slow down and savour a peaceful afternoon.
