Lamb kofta is a flavorful Middle Eastern dish made with ground lamb, fresh herbs, and aromatic spices such as cumin, coriander, and paprika. Fragrant rather than spicy, these juicy kofta are full of flavor and surprisingly easy to make at home. After enjoying lamb kofta at a restaurant and later trying a ready-to-cook version from the supermarket, I finally decided to make my own. Pan-fried until beautifully golden and juicy inside, they are delicious served with beetroot hummus, quinoa, and a fresh cucumber, tomato, and feta salad.

Ingredients

Cooking time: About 25 minutes (Chilling time (15–30 minutes) is not included)
Ingredients:

Yield: 3–4 servings

  • 500 g ground lamb
  • 1 onion (150–200 g), finely chopped
  • 2 garlic cloves
  • 4 tbsp chopped parsley
    (or 2 tbsp parsley + 2 tbsp mint)
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 2 tsp paprika
  • A pinch of ground cinnamon
  • ½ tsp black pepper
  • 7–8 g salt
    (about 1¼–1½ tsp)
  • Olive oil, as needed

For Extra Tender, Juicy Kofta (Recommended)

  • 2 tbsp plain yogurt or
  • 2 tbsp breadcrumbs
  • 1 tbsp milk

Either option will help keep the lamb kofta tender and juicy.

How to make it:

1. Prepare the onion
Finely chop the onion as much as possible. If it contains a lot of moisture, gently squeeze out some of the excess liquid, but not too much, as a little moisture helps keep the kofta juicy.

2. Mix the ingredients
Place the ground lamb, onion, garlic, parsley, cumin, parsley, paprika, cinnamon, salt, black pepper, and yogurt (if using) in a bowl. Gently mix until everything is evenly combined. Avoid overmixing or kneading the meat too much, as this can make the kofta firm rather than tender and juicy.

3. Chill the mixture
Refrigerate the mixture for 15–30 minutes. Chilling makes the kofta easier to shape and helps them hold their shape while cooking.

4. Shape the kofta
Divide the mixture into portions slightly smaller than a golf ball. Shape them into balls or slightly elongated ovals. For a more traditional kofta shape, make them a little longer and oval-shaped.

5. Pan-fry the kofta
Heat a little olive oil in a frying pan and add the kofta. Cook uncovered over medium heat for 4–5 minutes, turning them regularly until nicely browned on all sides.

6. Cook through
Reduce the heat slightly and cook for another 2–3 minutes, or until cooked through. Avoid overcooking, as this can make the lamb dry. Remove from the pan once cooked.

🌟Tips for Juicy and Flavorful Lamb Kofta🌟

⭐️ Serve with Beet Hummus
These lamb kofta pair beautifully with beetroot hummus. The rich lamb and aromatic spices complement the subtle sweetness of beetroot and the creamy hummus perfectly. Beetroot hummus is one of my husband’s favorites, so this combination has become a favorite in our home too.

⭐️ Make It a Complete Plate
I served the lamb kofta with beetroot hummus, quinoa, and a refreshing cucumber, tomato, and feta salad. They all complement each other beautifully, and combining different elements with each bite lets you enjoy a variety of flavors and textures on one plate.

⭐️ Aromatic, but Not Spicy
Although this recipe uses several spices, including cumin, coriander, and paprika, the kofta are not spicy. The spices add warmth and aroma rather than heat and bring out the natural flavor of the lamb.

⭐️ For Extra Juicy Kofta
Adding a little yogurt helps keep the lamb kofta tender and juicy. Alternatively, use breadcrumbs with a small amount of milk for a similarly soft texture.

⭐️ Cook Without a Lid
Keep the pan uncovered while cooking and turn the kofta regularly to brown them on all sides. This creates a deliciously browned exterior while keeping the inside juicy.

⭐️ Try Other Ground Meats

If lamb is difficult to find, ground beef works well too. If pork is available where you live, you can also use a mixture of ground beef and pork. With the same aromatic spices and herbs, mixed ground meat makes a delicious alternative to lamb.
